At present, vegetables crops for the human and animal consumption including additives have been genetically modified. This review presents and discusses the scientific information of GMO food (with emphasis on maize) and their possible effects on population health. Bt corn events mainly express Cry 1Ab and Cry1Ac proteins, wich argues safe for human and animal consumption, despite of the slight evidence of inflammatory and immune response in gastrointestinal level of non-target species that have been exposed. It is concluded to not underestimate the possible risk to human health because of the consumption of GM foods, due to insufficient toxicological data that ensures its long term safety. Nationally it is discussed and rejected the planting of transgenic maize by various sectors of the population for being the origin center, so it is necessary to spread scientific advances to the general public, to achieve a scientifically reasoned position as there is a regulatory framework which must be accomplish in very genetically modified food that is tried to plant and market
